Cooking Recipe 4

This week, I reached out to my grandma to ask her for a recipe to feature on my blog. She happens to be a very good cook and recently has been experimenting in the kitchen. This chicken lettuce wrap is one of her newer found recipes. One thing that I have found so far through this inquiry project, is that it is forcing me to reach out to family and friends that I may not talk to as much as I would like. I don’t phone my grandma as much as I should and this recipe was a new way to reach out and feel connected with my family. Next week I will be using a recipe from one of my best friends, who is currently going to school in Ottawa. In the classroom, I imagine this project could help students feel connected to each other and bond as we learn more about what they like to eat or what their families may cook at home.

Recipe:

1 IB lean ground chicken (the grocery store was out of ground chicken so I substituted it for lean ground pork instead), 2 large shallots; thinly sliced, 1/2 red pepper; finely diced, 1 tbsp chili powder, 2 tbsp lime juice, 2 tbsp orange juice, 1 tbsp fish sauce (I substituted this for soy sauce), 1 tbsp honey, 1 tbsp siracha sauce (optional), 1/3 cup cilantro leaves; coarsely chopped, iceberg lettuce leaves.

Instructions:

Step 1: on medium-high heat, add oil, chicken, shallots, red pepper, and chili powder to pan and cook until chicken is browned (roughly 5-8 minutes).

Step 2: Stir in Lime juice, orange juice, fish sauce, honey, and siracha (if using). Cook for another 3-5 minutes until most of the juices have evaporated. Stir 2 tbsp of the cilantro into the mixture. Remove from heat.

Step 3: Place the pan mixture onto lettuce leaves. Garnish with peanuts and cilantro.
